This is a favorite in our household. Usually this recipe is served cold but I have even served it hot and it is still super. Black bean and roasted corn salad can be served plain or atop your favorite rice recipe.
You can serve this recipe salad over rice or in tacos with some chicken or beef. Serve with Tortillas with a squeeze of lime.
I love cilantro and grow it every year. I start out with a small plant and go back and get more because I can never have enough cilantro. Some people don’t like it and one of my friends says it tastes like soap. I think it adds a freshness in all the recipes and it is popular in most Latin recipes.
1 15 oz cans of black beans
4 cups of corn – 2 – 3 ears of roasted corn on the cob
2 tomatoes large size diced
2 tablespoons of cilantro
1/4 cup Red onion minced
1/2 teaspoon of salt
1/4 cup of chives
1/4 cup of extra-virgin oil
1/4 cup lime juice
2 tbs of lime zest
1/4 cup of white Balsamic vinegar
Add black beans, tomatoes, onion and corn to a Medium size bowl.
In a small bowl whisk just gather oil, Vinegar,and lime juice, salt and pepper, and herbs. Let this sit while you put together your ingredients, so the flavors marinade and soften with the dressing to place all ingredients in a small bowl and mix well
