Buckeye Brownies
This is a great recipe for those brownie and peanut butter lovers around the world that celebrate those two wonderful flavors together. Today they are United for the prefect marriage of flavor in Buckeye brownies.
Fudge brownies with a creamy layer of peanut butter topped with chocolate ganache
I couldn’t wait to sink my teeth into these Buckeye Brownies! Opps! I did!
I have a friend who is an awesome baker who would love Buckeye Brownies. She has been making Buckeyes for years and is famous in my neck of the woods for her buckeyes. The patience it takes to form those buckeyes and coat them with chocolate is a labor of love.
I dedicate this recipe to her.
I could eat brownies everyday, all day long. Is there a brownie diet? I could invent one but it wouldn’t be for weight loss. Maybe it could be for those people who have trouble gaining weight that would be for them. Well, maybe in another world. But in my world I think I will continue to appreciate the two flavors combined in this easy recipe that will be a great treat.
Take Buckeye Brownies to your favorite teacher to say thank you, or serve them at your next family barbecue. They are easy to make ahead of time and will store well in an airtight container in the refrigerator.
Easy to put together Recipe
Ingredients:
1 box of your favorite brownie mix or your own favorite brownie recipe prepared according to directions for that recipe or alter this recipe by leaving out the salted caramel layer

For the peanut layer:
2 cups of creamy peanut butter
1/2 cup ( one stick) melted butter
1 tsp vanilla extract
1/8 teaspoon salt
1 1/2 cups powdered sugar
For the chocolate ganache:
1 cup of heavy cream
2 cups of chocolate chips
Directions
Follow directions to making your favorite brownie recipe in a 9 x 9 inch pan lined with parchment paper. Bake as directed. Allow to cool slightly.
While brownie is cooling prepare peanut butter layer:
Cream together the peanut butter and melted butter in a stand mixer and mix until smooth
Add the salt, vanilla, and powdered sugar to the peanut mixture and mix again until very smooth.
Spread over brownie
Chocolate ganache
Add cream and chocolate chips in a microwavable bowl and heat at 30 second intervals until chocolate is melted
Allow to stand a few minutes and mix well until smooth
Pour over peanut mixture
Place in refrigerator to set and store in airtight container until ready to serve.
Now isn’t that easy and delicious?
