Of course you never see the ones that turn out to be flops or fail, the pie crusts that shrunk in the pie pan, the fillings that never set, only the good results. You never the the beautiful cheesecake that almost ended up upside down on the floor! WHEW! Nice save!

Chocolate Peanut Butter Bundt – Great for a coffee break to refresh your day!
Its very exciting to see the results of my baking and think through what I would change next time to use a recipe. This recipe for Chocolate Peanut Butter Bundt requires no alterations in the recipe. I wouldn’t change a thing.
Bundt cakes are easy and adaptable to any recipe. I have taken some of my regular cake recipes and baked them in a bundt pan and they take on a whole new look because of the shape or type of pan used like these Strawberry and Vanilla Bean Bundt Cake, Chocolate Chip Bundt cake , Orange Cranberry Bundt Cake.

This cakes comes from a recipe that I used before but adapted for a friend who’s favorite candy is Reeses’ peanut butter cups. The peanut butter filling and toppings of ganache melt in your mouth and the cake is like a chocolate chiffon. I used cake flour to make it as light as possible yet moist and delicious.
See the peanut butter filling hiding in the cake to give your testbeds and added surprise with a little crunch from the peanuts. By beating the egg whites in this cake and using cake flour they add a lightness to the batter to give you a cake that is not dense in texture but fluffy and flavorfull.

Chocolate Peanut Butter Bundt
Ingredients
- 2 large eggs
- 1 3/4 cup flour
- 2 cups sugar
- 3/4 cup cocoa powder
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp vanilla
- 1 cup boiling water
- 1 tbsp instant coffee or espresso can sucstitue 8 oz of strong coffee
- 1/2 cup vegetable oil
- 1 cup milk
- 3.9 oc instant chocolate pudding
- Ingredients for the Peanut Cream filling
- 1/2 cup peanut butter
- 8 oz cream cheese
- 1/2 cup powdered sugar
- Ingredients for Chocolate Ganache
- 1 cup Good quality chocolate chopped in pieces
- 1/2 cup peanut butter
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
- Ingredients for Peanut butter ganache
- 1/2 cup peanut butter
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
Instructions
- Preheat oven to 350 degrees
- Grease and flour a 10 cup Bundt pan ( I like to use a spray that contains both oil and flour)
- for the peanut butter filling
- For filling mix together until creamy the peanut butter, cream cheese, 1/2 cup powdered sugar and set aside
- How to make the chocolate peanut butter ganache
- Melt together chopped chocolate and heavy cream in microwave 30 seconds at a time stirring in-between until melted.. When melted add peanut butter and powdered sugar and mix gently but thoroughly until smooth. Set aside.
- How to make the peanut butter ganache
- Mix together peanut butter, powdered sugar and heavy cream together. Melt slightly for 20 seconds. Stir together until smooth. If mixture is too thick add extra tablespoons of cream until you reach your desired drizzle texture. Set aside
- How to make the bundt cake
- In a medium bowl add flour, baking powder, baking soda, cocoa powder, and salt and combine together
- In a kitchen stand mixer add your milk, eggs, vanilla extract, and oil
- add coffee to boiling water and add to mixture
- Gradually add the dry ingredients to mixture and mix w
- Pour batter into prepared bundt pan.
- Drop peanut filling into batter gently all around the middle of the bundt pan not touching the edge.
- Place in oven and bake at 350 degrees for 45-50 minutes until cake tester or toothpick comes out clean
- Allow to cool 10 minutes in pan, then turn out onto cooling rack Allow to cool completly
- Drizzle peanut butter ganache onto bundt cake
- Drizzle chocolate peanut butter over bundt cake.
- Top by sprinkling chopped peanuts over the top of the cake
