Cilantro Lime Black Bean Rice is so easy with rich flavors of lime and roasted red peppers, garlic and cilantro for a fresh and delicious side dish.
It saves so much time when you use a pressure cooker. The flavors go so well together and this is a delicious version of rice for a great side. Add cooked chicken or ground beef for a complete meal. I used my pressure cooker for this recipe and saved so much time!
It literally takes only minutes to put together this easy side dish. Rice goes so well with so many dinners and using a pressure cooker cuts so much time.
Some people, including myself are intimidated to use a pressure cooker. I am no longer afraid. They are easy to use, and they are made so well these days and the automatic and electric ones are so much better than ones you cook over the stove top.
They are much safer. Pressure cookers clean up easy, and have so many settings they are versatile for so many ways to cook.
My pressure cooker has settings obviously to cook quickly on the pressure cooker settings. It can also act like a slow cooker, like a crock pot, and has sauté settings.
I can brown meats first then set the pressure to cook them. Stews can be cooked and ready to serve in a hour, normally they takes hours. The pressure cooker will also keep you food warm after cooking which is a great additional feature.

To prep Cilantro Lime Black Bean Rice
Cup up your peppers
Drain your black beans and rinse
Chop up cilantro
Pre-measure your ingredients
Ingredients
1 1/2 cup long grain rice
1/2 cup red pepper or roasted red peppers
2 scallions chopped
1 tsp salt
2 tbsp sofrito
15 oz can black beans
1/2 cup frozen corn
2 cloves of garlic minced
2 cups vegetable stock or chicken stock
1/4 cup lime juice
1/4 cup cilantro leaves chopped small
To make the Rice
Place rice, peppers, bean, corn, scallions, sofrito and garlic in the pressure cooker with the vegetable stock
Close and lock lid – set pressure to white rice. It takes about 10 minutes for the pressure cooker to heat up and then 10 minutes to cook the rice
Once cooked and cycle is finished release pressure and open lid,
Add chopped cilantro and lime juice, fluff with a fork and mix together. Serve hot

Ingredients
- 1 1/2 cup long grain rice
- 1/2 cup roasted red peppers or red pepper -chopped
- 2 scallions chopped
- 15 0z black beans 1 can
- 1/2 cup frozen corn
- 2 cloves of garlic minced
- 2 cups vegetable stock ok to substitue chicken stock
- 1/4 cup lime juice
- 1/4 cup cilantro leaves chopped fine
- 2 tbsp Sofrito
Instructions
- Place rice, peppers, beans, corn, scallions, sofrito, lime juice and garlic in the cooker with vegetable stock
- Close and lock lid set pressure to high and white rice.
- Once cooked and cycle is finished release pressure and open lid,
- Add chopped cilantro and fluff with a fork and mix. Serve hot
