Coconut Lime Tart
This delicious Coconut Lime Tart has the creamiest coconut filling with hints of tangy lime on a shortbread cookie crust with coconut baked right in that melts in your mouth.
Vacation to me means holding a Pina Coladas on the beach watching the sun set after a fun filled but relaxing day and having a slice of my delicious Coconut Lime Tart.
My all time favorite vacation that I have ever taken was a Cruise we took to the Caribbean. We snorkeled and we took an afternoon ride on a Catamaran where we were served this awesome rum punch. We hit some rough seas for a minute or two while on the Cataarn and got to watch my friends get tossed by the sea and getting thrown in the air and never losing hold of their rum punch.
Coconut for some reason always takes me back to relaxing days in the sun and that is why I love the refreshing Coconut Lime Tart so much.

Life is busy and it seems the older I get the busier and faster life goes. I don’t remember in my younger days having my days so full. I enjoy that, being busy and all but taking time to relax and making sure you have time to reflect on the important things is crucial…..Like vacations, days off, and outings with friends and family. I loved John Denver when he was so popular and I do get teased about that but he has a special place in my heart no one can touch. One of the reasons I liked him so much were the words in some of his songs. Like the lyrics in his song Poems and Prayers and Promises. He sang, talk about poems and prayers and promises, things that we believe in. How sweet it is to love someone. How right it is to care. How long it’s been since yesterday and what about tomorrow, and what about all the dreams and the memories we share. I love that song. Sigh! Well there I go being nostalgic and showing my age. I think he would have liked my Coconut Lime Tart!
You have to agree though, there are a lot of important things in life. We work hard and we were meant to have time to rest. Take time off to bake and relax
Coconut Lime Tart has the perfect combination of tangy Lime and sweet coconut cream. I always make my tarts with some kind of special crust and this one has sweetened coconut baked right into the crust.
For the tart crust
2 cups of coconut cookies processed into crumbs, If you can not find these cookies you can use shortbread or graham cracker crumbs
1/2 cup granulated sugar
1/2 cup sweetened coconut
1 tsp coconut extract
6-8 tablespoons of melted butter.
For the tart
1/2 cup coconut milk or heavy cream
One 14 oz can of sweetened condensed milk
1/2 cup fresh key lime juice
3 tbs lime zest
1 cup cream of coconut
1 1/2 tsp coconut extract
2 eggs 5 yolks
toasted coconut , unsweetened coconut large shavings and lime shavings
Add coconut, cookie crumbs, melted butter, coconut extract and granulated sugar to medium size bowl and mix together. Press into tart pan. Bake for 8-10 minutes in oven at 325 degrees. Remove from oven and allow to cool slightly while you make the filling.
In a large bowl add slightly beat eggs mixing together in large mixing bowl
Add coconut milk, sweetened condensed milk, lime juice and zest, cream of coconut, and coconut extract to the slightly beaten eggs.
Pour over crumb crust.
Bake in oven at 275 for about 50-60 minutes until custard is set.
Remove from oven and allow to cool.
Decorate with Lime shavings, and toasted coconut
Refrigerate until ready to serve

- 1 cup cream of coconut
- 1 1/2 tsp coconut extract
- 1 large eggs
- 5 large eggs yolks
- coconut toasted unsweetened coconut large shavings and lime shavings
- Add coconut, cookie crumbs, melted butter, coconut extract and granulated sugar to medium size bowl and mix together. Press into tart pan.
- Bake for 8-10 minutes in oven at 325 degrees. Remove from oven and allow to cool slightly while you make the filling.
- In a large bowl add slightly beat eggs mixing together in large mixing bowl
- Add coconut milk, sweetened condensed milk, lime juice and zest, cream of coconut, and coconut extract to the slightly beaten eggs.

- Bake in oven at 375 for about 50-60 minutes until custard is set.
- Remove from oven and allow to cool.
