Spicy, flavorful shrimp roasted in the oven with peppers and onions, with a fresh lime marinade and herbs in a one pan, healthy, thirty minute meal! Make a Cilantro Lime Dip to add to the fajitas to add even more great flavor.

What you need to Make Easy Sheet Pan Fajitas
Shrimp
Colorful bell peppers of choice- I like to use yellow, red, and orange
red onion
limes
sweet onion
salt
olive
olive oil
paprika
garlic
onion powder
chipotle
cumin
chili powder
For the Cilantro Lime dip
plain yogurt or sour cream
lime juice
cilantro
salt
pepper
garlic
Tips To Make Easy Sheet Pan Fajitas
Make sue you rub the shrimp and marinade for 5 minutes before placing them not the sheet pan
Oven needs to be hot -450 degrees
Slice veggies super thin so they cook in the same amount of time the shrimp does.
To make the Cilantro Lime Dip
Place the Cilantro, Lime juice, yogurt or sour cream salt, pepper and garlic into a blender
Blend until smooth, about one minute Add the olive oil and blend again.
Add more salt or pepper to taste
To Make the Shrimp Fajitas
The onions and bell pepper are sliced very thin so that they cook at the same rate at the shrimp and everything is cooked on just one sheet pan. Finish this shrimp fajita recipe with a squeeze of fresh lime juice and chopped cilantro for a dinner that is packed with flavor and veggie
Preheat oven to 450° F
Clean shrimp and devein.
Set aside in medium size bowl
Spray large baking sheet with non stick cooking spray.
Add spices and lime juice to shrimp and toss well to combine
Add peppers and onions to bowl and combine
Place shrimp and vegetables on sheet pan
Bake in preheated oven for ten minutes
Turn broiler on high and move sheet pan to highest rack to char shrimp and veggies
Remove from oven
Serve shrimp and veggies in a warm tortilla adding your Cilantro Lime dip
Serve to your family or guests with a wedge of lime and squeeze lime into tortilla after adding veggies and dip
Easy Sheet Pan Shrimp Fajitas
Ingredients
- cilantro lime dip
- 1 cup plain yogurt can substitute sour cream
- 3 tbsp lime juice
- 1 clove garlic
- 1/2 bunch cilantro
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 tsp olive oil
- Shrimp fajitas
- 2 pounds Shrimp easiest to use frozen clean and devened shrimp
- 3 cups bell peppers of choice- I like to use yellow,red, and orange
- 1 1/2 cups red onion large
- 1 limes
- 1 cup sweet onion
- 1 tsp salt
- 1 tbsp olive oil
- 1 teaspoon paprika
- 2 cloves garlic
- 1 tbsp onion powder
- 1/4 tsp chipotle
- 2 tbsp cilantrop chopped for garnish
- 1/2 tsp cumin
- 1/4 tsp chili powder
- 2 tbsp lime juice
- 8 tortillas 2 per person
Instructions
Cilantro lime dip
- Place the Cilantro, Lime juice, yogurt or sour cream salt, pepper and garlic into a blender
- Blend until smooth, about one minute. Add the olive oil and blend again.
Shrimp fajitas
- Clean and devein shrimp if needed
- Set aside in a small bowl, add spices and lime juice to shrimp, toss well to combine, allow to marinade for at least five minutes
- Preheat oven to 450 degrees
- Slice Peppers and onions very thin, add salt and pepper to taste, toss to combine
- Place shrimp and vegetables on a cookie sheet
- Bake in oven for about ten minutes
- Turn broiler on 500 or on high and move sheet pan to upper rack in oven to char your vegetables and shrimp for two minutes
- Remove from Oven
- Add chopped cilantro as desired
tortillas
- heat frying pan on medium and heat each tortilla for one minute and keep warm in tin foil
- serve with or without tortillas with Cilantro Lime dip
