Maple Bacon Bourbon Jam is jam taken to the next level of flavor town. It is rich , thick, sweet with a little kick and the next best thing to the already outstanding jams we all know and love! Pair it with eggs in the morning, spread it on your turkey sandwich, or better yet, top it on Pork Tenderloin and you have a winner!
I would never have thought of putting together these great flavors. A very good friend suggested to me, who happens to be a vegetarian! She doesn’t eat bacon! She doesn’t drink bourbon either! We were talking about a menu for a special gathering I had coming up and I thought she was kidding when she mentioned a jam made with bourbon. Who ever heard of jam made with bacon? Then we searched and there it was, bacon with maple in a reduction that resembles jam.

Maple Bacon Bourbon Jam is a sweet combination of flavors reesembling the name. Bacon dominates this dish combined with onions, garlic, and the sweetness of brown sugar and of course bacon and bourbon with a reduction that makes a great addition to any dish.
I make jam every year but never made anything like this before. I make the usual strawberry, peach, grape, and chocolate raspberry, but this recipe caught my eye one day. Could there be such a thing as jam with bacon?

Bacon….. maple syrup…. Brown sugar…. bourbon…

One pound of bacon fried until crispy, broken/chopped into tiny pieces by hand or in a food processor
1 sweet onion minced
2 cloves of garlic minced
1/2 cup bourbon
1/2 cup brown sugar
1/2 cup maple syrup
1/4 cup balsamic vinegar
1 teaspoon paprika
1/2 tsp chili powder
Cook the bacon until crispy and drain it on paper towels
In one tablespoon of bacon grease, cook onions and garlic until translucent.
Add the chili powder and paprika and stir to combine
Turn the heat to medium high, and add bourbon, brown sugar, vinegar and maple syrup. Stir while mixture bubbles for about 3-4 minutes.
Add your bacon and turn to medium low and continue to simmer for ten minutes until it thickens and resembles jam.
Remove from heat and store in mason jars. My batch made 1 1/2 pints.
Store in the refrigerator.
Serve warm over your favorite dish.
Note: II think a great option for those who love a spicier version would be to add 1/4 tsp red pepper flakes.
