When I was thinking about this making this recipe I knew the fact that I have a sweet tooth is no secret. But there is an expression that says someone is “born with a sweet tooth” and if that is possible I believe I was. I don’t think I am addicted to sugar, I just think that baked goods and sweets and treats just make life sweeter. Don’t you agree?
I’m not sure if I ever shared this before but the first lesson in baking from my Mother to bake was a cheesecake. My Mother didn’t have much patience for me in the kitchen. Maybe it was because I was easily distracted.
When I was a teenager she worked at a Publishing company and I would get home early enough to be able to start dinner. That meant that whatever she had left over for dinner, all I needed to do was to “heat it up”. My father worked in New York City and took the train in every day and we waited for him at the train station to pick him up. My new job became “ starting supper” some nights but I was such a busy teenager and so easily distracted. I would turn dinner on and forget I was “cooking” and it would get burnt. And yet night after night I was given the same responsibility to “start” dinner.
I realized I knew nothing about cooking and asked mom for some lessons. She made an awesome cheesecake with a cherry topping. Since I had asked to learn she took out her Cheesecake recipe and thought she would start there for some reason. Maybe because it was a favorite of mine. She taught me the difference between stirring and folding in. As the lesson went on, I got silly, she got mad, and she lost patience with me. That was my one and only lesson.

I am a crazy perfectionist when it comes to making cheesecakes and they take a while to make, so I like to have one that doesn’t takes hours and hours. This recipe for Creamy No Bake Cheesecake With Brownie Bottom is just that.
Use a boxed brownie mix, or your favorite homemade recipe and you can even substitute and use gluten free as well if you like that.
How to make a No Bake Cheesecake
It is so easy to follow these steps. No Baking involved and you have a perfect dessert to make ahead of time!
Ingredients
3 packages of 8 oz softened cream cheese
8 oz package (1 tub) of cool whip
Two teaspoons of Vanilla extract
1 cup of granulated sugar
One boxed brownie mix including two eggs and 1/2 cup melted butter according to directions on the box
Directions
Follow directions to make the brownies on the box
Add Brownie mixture to a 9 inch spring form pan
Bake as directed on box set aside when done
Soften cream cheese or allow to come to room temperature and add into the kitchen mixer
Add add the sugar
Mix well until very creamy
Add vanilla
Blend all ingredients for filling until very creamy
Gradually fold in 8 ounces (1 tub) of Cool Whip or substitute one cup of heavy cream whipped
Add to springform pan over brownie crust smoothing top
Place in fridge and allow to cool and set for 5 to 6 hours
Decorate with strawberries

Ingredients
- 24 oz cream cheese 3- 8 oz packages softened
- 1 8 oz cool whip
- 2 tsp Vanilla extract
- 1 cup granulated sugar
- One boxed brownie mix including two eggs and 1/2 cup melted butter according to directions on the box
- 2 large eggs
- 1/2 cup butter melted
Instructions
- Follow directions to make the brownies on the box
- Add Brownie mixture to a 9 inch spring form pan
- Bake as directed on box
- Soften cream cheese or allow to come to room temperature and add into the kitchen mixer
- Add add the sugar
- Mix well until very creamy
- Add vanilla
- Blend all ingredients for filling until very creamy
- Gradually fold in 8 ounces ( 1 tub)of Cool Whip
- Add to springform pan over brownie crus,t smoothing top
- Place in fridge and allow to cool and set for 5 to 6 hour
- Decorate with strawberries

Really easy and fast. I’m gluten intolerant, so I used a gluten free brownie mix. Also used powdered sugar for a smoother consistency
