Orange Cranberry Bundt Cake

We are in the dead of winter and I am longing for spring. This Orange Cranberry Bundt Cake so rich and moist, full of orange and cranberry flavors is such and awesome and easy bundt cake. It helps to remind me the seasons will change and spring and summer will return. I know Spring is still a few months away but the promise of its return is just around the corner.

We have a break in the weather these last few days so I have been craving fresh flavors that remind me of spring.
The trees start turning green and the fragrance of their blossoms is in the air. The garden comes alive and seeds get planted that will produce a great crop for the next season.
The smell of an orange brings back memories of sitting at the Kitchen table as a child eating breakfast on a Sunday morning. I think of that when I peel an orange or make orange zest to cook with it. Those memories are locked there forever.
Difference fragrances and smells link to memories in our hearts. In my mother and father’s house the sheets always had a certain fresh, clean, and one of a kind smell. It’s the same thing when it comes to my husband’s undershirts when they come out of the wash after I have bleached them. I use fabric softener on them and they smell so good and fresh. No other shirts smell like them.
The smell of orange is one of these things makes me smile, because, is one of the greatest smells on earth.
Orange Cranberry Bundt Cake is Moist, full of orange flavor that compliments the tartness of the cranberries. It is like a little bite of sunshine in every bite.

Top your Orange Cranberry Bundt Cake with frosted Cranberries and you have that special dessert for your next event or family dinner!
Ingredients
3 tbs orange zest
3 eggs
2 1/2 cups of flour (I use Bob’s red mill organic unbleached flour)
1 teaspoon vanilla
1 tsp baking powder
1 3/4 cup sugar
1/2 tsp baking soda
1/2 teaspoon salt
1 cup butter milk
1/4 cup sour cream
1 cup butter softened
2 cups of fresh or frozen cranberries
Directions
Preheat oven
Make sure your mixer is set on stir (slow speed) and add to your butter mixture about one cup of your flour ( your dry ingredients) at a time and alternate with your milk , repeating this until all your milk and flour are mixed together and all your ingredients are well incorporated
Fold in your sour cream
Fold in your cranberries
Pour your batter into your bundt pan
Place in preheated oven at 325 degrees for 45-55 minutes until golden brown and a tootpick comes out clean
OPTIONAL: Frost your fresh cranberries by taking one egg white and one tablespoon of water, and add to a small bowl.and slightly beat your mixture. Add cranberries to that mixture, slightly drain and roll in granulated sugar and let air dry for about 1-2 hours.
Optional: you can Mix together 1 tsp orange juice, 1 tsp orange zest and 1/4 cup confectioners sugar. Mix until smooth. Drizzle your orange glaze for a finished presentation and a little extra pizazz!

Orange Cranberry Bundt Cake
Ingredients
- 3 tbs orange zest
- 3 eggs
- 2 1/2 cups flour I use Bob's red mill flour
- 1 teaspoon vanilla
- 1 3/4 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 cup butter milk
- 1/4 cup sour cream
- 1 cup butter softened
- 2 cups cranberries fresh
For the Orange Glaze
- 1 Tbs Orange juice
- 1 Tsp orange juice
- 1/4 Cup Confectioners sugar
Instructions
- Preheat oven to 325 degrees F
- Grease and flour your bundt pan
- Mix siftened butter and sugar until creamy and light in color.
- Add vanilla and orange zest
- Add eggs one at a time to butter mixture and mix slowly
- Sift four, salt, baking powder, baking soda and set aside
- Set mixer on slow speed. Add one cup of flour lixture one at a time alternating with milk and repeating until all wet and dry ingredients are mixed together
- Fold in sour cream
- Fold in cranberries
- Pour into prepared bundt pan
- Bake in prheaed oven for 45-55 minutes r until golden brown and toothpick comes out clean
Frost Cranberries
- Mix together one egg white and one tablespoon of water and beat well
- Add cranberries to egg mixture, slightly drain
- roll in granulated sugar
- Let air dry 1-2 hours
- place frosted cranberries in center top of cake
For the Orange Glaze
- Mix together orange juice, zest and confectioners sugar until smooth
- Drizzle glaze over cake.

My friend made this for me last winter and I couldn’t stop eating it. I loved how fresh and light the orange was and it was just the right amount of sweetness to keep me going back for another slice.
This was a delicious and easy to follow recipe. It was moist and full of flavor. I didn’t have buttermilk so I used milk and cream of tartar. Next time I make it I’ll use buttermilk and I’m sure it will turn out even better. Thanks for a great recipe, it’s a keeper in my recipes!
