Pina colada cupcakes
Ingredients
- 2/1/2 cups flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3 large eggs
- 2 cups sugar
- 3/4 cup canola oil
- 1 tsp vanilla
- 2 tsp coconut flavor extract
- 3/4 cup sour cream full fat
- 1 1/2 cups crushed pineapple slightly drained
- 1 jar marachino cherries optional addition for decoration
- Coconut Cream Cheese Frosting
- 3/4 cup butter 1 1/2 sticks
- 4 oz cream cheese
- 4 cups powdered sugar
- 2 tsp coconut flavor extract
- 1-2 tbs coconut flavor rum
Instructions
- Line 24 cupcake tins with colorful liners
- Preheat oven to 350 degrees
- Sift together flour, baking powder, salt, baking soda into a medium size bowl and set aside
- In a kitchen mixer bowl, beat together eggs, and sugar until they are light in color and whipped together
- Add in Vanilla, coconut extract and oil, pineapple, and sour cream and mix together
- Slowly add the wet mixture into the flour mixture and stir gently to incorporate all the ingredients
- Place batter in cup cake tins 2/3 full
- Bake in preheated oven for 18-22 minutes until golden brown and toothpick comes out clean.
- Let cool completely before frosting.

- add flavoring and mx until incorporated
- pipe frosting on top of the cupcakes. Top with cherries

Quite possibly the best cupcakes I ever had!! So delicious and moist!
Finally…I made these cupcakes and was very glad it did. Even without the frosting, the cake is delicious. My husband will agree since he snatched one while they were cooling down and ate it. As the previous comment, the cake is moist scrumptious-very easy to make. My husband loved them so much, he didn’t want to wait for the frosting. 👌🏼 But I will frost the rest of them.
