Strawberry And Vanilla Bean Bundt Cake Is Moist and delicious
Strawberries are a favorite in my house. They remind me of spring. Therefore, Strawberry and Vanilla Bean Bundt Cake
is a favorite as well. It has a tender crumb that stays moist for days, if the cake lasts that long in you house. The difference between using a vanilla bean or vanilla extract is quite different. Vanilla Beans give definitely more depth of flavor than extract but if extract is all you have then you can use that as well but use more.
This is an easy recipe to put together and doesn’t require any special skills. I decided to use my heart shape bundt pan for this special cake! Nordic Ware Elegant Heart Bundt Pan
In the spring up here in Central New York June, is the time to go strawberry picking. I remember as a child going Strawberry picking with my Mother and sitting in the fields and picking berries and eating them right off the Strawberry bush. We would come home and Mother would make great desserts and freeze them for the Winter (if they lasted that long) to use them and they would remind us of spring. Today that’s what strawberries remind me of. So, when I bake this Strawberry Vanilla Bean Bundt Cake it brings back those child hood memories again.
These days I don’t seem to make the time to go picking and I don’t like going to the fields and expending all that energy on picking, when I can stock up from the market or grocer when they are on sale. I guess I have grown a little lazy.
I wanted to add real Vanilla bean to this recipe and it took on quite a search to find them. The local grocer by me sells then in a tiny jar , one for $10.99. I searched and search for a better deal since I do know that vanilla beans are expensive, but really worth the added expense once in a while.
Where do Vanilla beans come from
What I didn’t know until recently is the history of the Vanilla bean. I learned that Vanilla Beans come from an Orchid. The Vanilla Orchid is a vine-like plant that grows up trees. The vine can grow up to 30 feet long. The most widely used orchid to produce vanilla is the Vanilla plantifolia. The Vanilla Plantifolia, or flat-Leaved Vanilla, is the only orchid used for industrial food production. The only part of the plant that is used is the pod.
The vanilla pod is frequently referred to as the bean. The pods are picked when they are still not ripe, and then plunged into hot water and laid out to dry from anywhere from two to six months. They can only grow 10 to 20 degrees north and south of the equator. I guess that is what makes them expensive! Thank you Wikipedia.
So recently I learned all this about the Vanilla orchid and orchids have always been a favorite of mine.I used to live in the Bronx , New York. One of my favorite things to do was to go to the orchid show at the Botanical Gardens in the Bronx. Once a year they have The Orchid Show in the dead of Winter and they bring in all sorts of Orchids from all over the World. I never knew there were such beautiful flowers. Orchids come in all different shapes and sizes and colors.
Another time I had experience with orchids was when my husband and I went on a trip to Hawaii. We saved up for 30th anniversary and had the trip of a lifetime. When we arrived in Hawaii after our very long flight when we got off the plane we received a special greeting. We received a lei of beautiful purple orchids. I will never forget that they were so beautiful.
Someday I would like to go back to Hawaii because it really is paradise on earth. Though there are Orchids that grown in Hawaii there aren’t the kind like the Vanilla Orchid.
Vanilla bean is a special way to add vanilla to your recipes
Vanilla is the second most expensive spice after Saffron. It can be more expensive to buy vanilla beans to use in your recipes, but they add a little extra special flavor than just using the Vanilla extract doesn’t give you. But if you can’t find and beans you can substitute an extra teaspoon of vanilla extract.
To use any vanilla bean you carefully take a sharp onife and cut the bean lengthwise and scrape out the tiny vanilla seeds that are inside. It’s so easy!
How To Make Strawberry And Vanilla Bean Bundt Cake
One cup of butter softened
1 3/4 cup of granulated sugar
3 teaspoons of baking powder
4 eggs room temperature
if not using a vanilla bean substitute 2 tablespoon of vanilla extract
1 vanilla bean
2 1/2 cups of flour
1 1/2 cups of strawberries chopped
8 oz of cream cheese
4 tablespoons of butter
3 cups of powdered sugar
4 – 6 tablespoons of milk depending on how thin and runny you want your frosting
Prepare your bundt pan by spraying with cooking spray and flour or use Baker’s joy that has both spray and flour combined. Set aside
Cream together softened butter and sugar in a kitchen stand mixer for 5 to 7 minutes until butter is pale yellow and fluffy
Sift together dry ingredients in a separate bowl
Cut open the vanilla bean and scrape out the seeds inside and place in 1 cup of milk along with the vanilla extract
Add the eggs one at a time to the butter and sugar mixture and mix well after each addition
Alternate adding the dry ingredients and the milk until well Incorporated
Fold in the chopped strawberries gently
Pour batter into a bundt pan or two 8 inch round cake pans
Place in preheated oven at 350° and bake for 40-50 minutes until your cake tester or toothpick comes out clean. (if you use cake pans bake for about 25-30 minutes.)
Place on cooling rack and allow to cool completely before inverting pan
Decorate with Frosting and fresh strawberries according to your preference.
For this recipe I used my Nordic ware Heart shaped Bundt pan. If you do not have this you can use two 8 ” can pans or a 9x 13 ” pan , baking time will vary and I personally have not maid it in a pan like that. Decorate how you would like. Add frosting between layers for layer cake. Drizzle on top.
I topped this heart shaped cake with a simple frosting. Drizzle over cake. Top with more fresh strawberries if desired
