Soups are one of my favorite meals to prepare. The don’t take a lot of prep work and the key to making a good soup, especially making This Easy Chicken Tortilla Soup is to cook it low and slow. I used my Crock pot for this recipe and placed all the ingredients in the slow cooker and let it do it’s thing.
Crock Pot soup-The best and easiest way to make this delicious Chicken Tortilla Soup
They are always so convenient and easy and tasty! Rotisserie chickens by me cost $4.99 ready cooked. Using canned vegetables makes this Easy Chicken Tortilla Soup so easy and you end up with a Crock pot full of inexpensive dinner to feed a small army. This soup can only get better as leftovers ( If there are any ). It freezes well and I freeze the soup in Zip lock bags and take it out when I need to. My motto is if I am cooking and spending time to make something for a meal, then I am going to prepare extra for more than one dinner. It saves on time and money.
I actually made this recipe in the middle of the night recently when I was home with pneumonia. The Dr. had put me on prednisone and if you have never been on it, I hope you never will be. For me it gave me insomnia and bouts of energy where I couldn’t sit still very well, so I decided at 2:30 in the morning to get up and have a cup of tea. While I was sitting in the kitchen I remembered I had bought a rotisserie chicken. I thought I could really put the time to good use. Out it came and I went to work.
One rotisserie chicken – meat removed and shredded
Two large containers of chicken broth ( 32 oz each)
Two small cans of crushed tomatoes
Two cloves of garlic minced
One teaspoon salt
Two cans of pink beans rinsed and drained
Two cans of black beans rinsed and drained
1/4 cup dried or fresh cilantro ( I like fresh cilantro )
Two cans kernel corn
One large onion minced
After mincing the onion and garlic add all ingredients at once into crock pot.
Cook on high for 4 – 6 hours
Serve plain, or add tortillas crisps to the soup for extra crunch and/or top with cheese
Chicken Tortilla Soup
- 1 whole rotisserie chicken - meat removed and shredded
- 64 0z chicken broth 32 oz each
- 30 oz crushed tomatoes 2- 15 oz cans
- 2 garlic cloves minced
- 1 tsp salt
- 30 oz pink beans 2- 15 0z cans rinsed and drained
- 30 oz black beans 2 -15 oz cans - rinsed and drained
- 1/4 cup dried or fresh cilantro I i like fresh cilantro
- 30 oz corn 2-15 oz
- 1 onion minced
- After mincing the onion and garlic add all ingredients into crock pot.
- Cook on high for 4 - 6 hours
- Serve plain, or add tortillas to the soup for extra crunch and top with cheese or sour cream-your preference
