Ingredients

  • 1 cup Feta Cheese
  • 2 small heads of endive
  • 1/2 cup roasted walnuts
  • 4 dates minced
  • 1/2 cup honey
  • 2 tablespoons of balsamic glaze. You can buy balsamic glaze at most grocery stores. It is a balsamic reduction

Instructions

  • Separate the endive heaves and rinse and dry and set aside
  • Mix together the honey and balsamic glaze. Set aside
  • Place walnuts in a small pan on the stove and heat on medium until browned
  • In a small bowl mix together the Feta, roasted walnuts and minced dates
  • Stuff endive leaves withe the feta mixture
  • Drizzle with honey balsamic drizzle

Notes

Each head of endive will give you anywhere from 4-6 pieces.
Add additional heads of endive to increase serving sizes.
Recipe for approximately 4 people about three pieces each
